In the vineyard: Montepulciano grown partly with Guyot and partly with Abruzzese pergola at an altitude of about 450m above sea level on soils facing south - south / east tendentially calcareous and rich in skeleton. The vineyards of the Coste di Moro Riserva project produce by far the most sugary grapes and maintain a high quality level even in the less favorable years. The harvest of these grapes is carried out in boxes of 20kg each, choosing, among all the vineyards surveyed, the batches of grapes with the best ripeness index. The residence time is decided from time to time according to the vintage and the characteristics of the wine (the time is directly proportional to the structure of the product itself).
In the cellar: maceration takes place in vertical vinificators with leaching and temperature control programming. The must is fermented with its own indigenous yeasts and after about fifteen days of maceration.
Refinement: refinement until malolactic closure takes place in stainless steel tanks. At the end of the malolactic fermentation, an aging of at least 18 months in medium-large oak barrels follows, while only a part in small 225-liter French oak barrels. The residence time is decided from time to time according to the vintage and the characteristics of the wine (the time is directly proportional to the structure of the product itself). With monthly organoleptic checks its evolution is followed and finally it is decided to move on to the subsequent refinement in the bottle.
Sensory characteristics: the wine is brilliant, ruby red in color with slight orange reflections. It has an intense, ethereal, spicy, slightly woody scent. In the mouth it is warm, soft, with light and sweet tannins, very persistent.
Pairings: cold cuts, grilled and baked meats, first courses with very structured sauces.
Serving temperature: 12-14 ° C
